Do I need variable speed on a bench grinder?

Variable speed adds cost and complexity but is genuinely useful if you do both sharpening (low) and metal removal or wire-wheel work (high) on the same machine. If you only do one or the other, reviewers tend to recommend buying a dedicated fixed-speed model in the correct RPM range instead.
