How much cooking space do I actually need?

For a family of four, 500–600 sq. in. is plenty. If you want to fit a whole packer brisket or cook for crowds, look for 850 sq. in. or more. Tabletop and portable models in the 200–400 sq. in. range are fine for couples, camping, or tailgating but won't handle a full brisket flat plus point together.
